- Preheat your oven to 375°F (190°C). While the oven heats, prepare your baking sheet. A clean pan will suffice, no need for parchment or grease.
- In a medium bowl, combine the granulated sugar, brown sugar, and softened butter. Use a spoon or whisk to beat the mixture until it becomes smooth and fluffy. This step is important for ensuring that your cookies are light and not too dense.
- Pour in the vanilla extract and add just the egg yolk; save the white for another recipe. Stir well until everything blends into a smooth mixture.
- Next, add the flour, baking soda, and salt directly to the bowl. Stir gently until the flour is fully incorporated. Avoid over mixing; just mix enough to combine the dough.
- Now the fun part is folding in your chocolate chips. Start with ¼ cup and add more if you desire extra chocolate in every bite. Feel free to mix in additional flavors here, too!
- Scoop round tablespoons of dough onto the baking sheet, leaving about 2-inches of space between each cookie. Bake for 8 to 10 minutes, or until the edges are lightly golden and the centers appear just set. Allow the cookies to sit on the pan for 2 minutes before transferring them to a wire rack to cool.

You can prepare this dough in advance and freeze it. Simply wrap the dough tightly in plastic wrap and store it in the freezer for up to two months.
When you are ready to bake, thaw the dough at room temperature for one to two hours before scooping and baking as usual. Baked cookies can be stored in an airtight container at room temperature for up to four days, or you can freeze them for longer storage.
If the cookies have an off smell, show signs of mold, or taste strange, it is best not to eat them. Freshness is important for the best cookie experience!
