Step 1: Create the Dough
In a large mixing bowl, combine all ingredients at once – bread flour, wheat flour, active starter, filtered water, salt, honey, molasses, coffee grounds, white sugar, cocoa powder, and olive oil. Using your hands or a dough scraper, mix everything together until you achieve a shaggy, messy-looking dough. Do not worry about it being perfect at this stage; the magic happens in the folding process.
Step 2: Perform Coil Folds
Instead of traditional kneading, we will use coil folds to develop the gluten structure. Every 30 minutes for the next 2 hours, perform a coil fold by grabbing the dough from underneath, stretching it up, and folding it over itself. Rotate the bowl 90 degrees and repeat. Do this four times in total, then let the dough rest undisturbed.
Step 3: Shape and Pan
After your coil folds are complete, gently shape the dough into a loaf form. Spray your bread pan generously with nonstick spray and place the shaped dough inside. The dough should fill about two-thirds of the pan. Cover with a damp towel and let it rise until it is nearly doubled in size, about 2-3 hours.
Step 4: Prepare for Baking
Preheat your oven to 375°F (190°C). Once the dough has risen properly, gently brush the top with water and sprinkle generously with rolled oats. This creates that signature texture and appearance that makes the bread so visually appealing.
Step 5: Bake to Perfection
Place the bread pan in the center of your preheated oven. Bake for exactly 37 minutes without opening the oven door. The Sourdough Bread is done when it sounds hollow when tapped and has a beautiful golden-brown color. Remove from the oven and immediately brush the top with melted butter for that glossy, irresistible finish.
Step 6: Cool and Serve
Allow the Sourdough Bread to cool in the pan for 10 minutes before turning it out onto a cooling rack. Wait at least 30 minutes before slicing to ensure the crumb structure sets properly. Slice with a sharp knife and serve warmth for the ultimate experience.
